SPAIN (Barcelona) - Since recent success of the El Bulli and Fat Duck molecular temples, sommeliers, too, are spending time on recommendations for molecular food that goes with diverse wines. Now, Europe’s first molecular wine conference is dedicated to this topic. The one-day Wine & Culinary International Forum, initiated and supported by the Spanish Torres wine dynasty, took place last weekend in Barcelona in the presence of over 250 international pressmen, industrial professionals and dozens of sommeliers.
